Quinoa

I'd like to eat healthier in 2012 and that means more veggies and less cheese.  So, I bought my first box of quinoa.  Apparently is pretty healthy and I'm eating it for lunch this week.  I added salt, pepper, and cumin once cooked.  Then tossed in diced tomatoes, avocado, bell pepper, and fat free sour cream.

It's likely I'll be tired of this by Friday, but I'm looking forward to it for lunch today.


Quinoa.  That's the stuff.
