Work Lunches

This time of year, my office eats lunch together and various snacks, dips, desserts to celebrate the Christmas season.  We each take a day to bring lunch in and today is my day.  We eat too much and try to outdo each other.  Today was my day.  I took a cue from Nathan and brought in pulled pork done in the crock pot.  It is so easy and it was SO good!

Dice an onion and put in the bottom of the crock.  Next put in a pork roast (mine was 3.5 lb) seasoned with salt, pepper, and Italian seasonings.  Then add apple cider vinegar.  Nathan does a tablespoon; I did 1/2 cup because I like it.  It cooked overnight and then I kept it warming all day before we ate.  Yum!

Monday -- bougie pizza
Tuesday -- meat ball subs
Wednesday -- chili
Thursday -- pork and roasted carrots & green beans
Friday -- chicken casserole
Monday -- homemade lasagna

Bring on the exercise!
